Between 1976 and 1991, the American diet changed significantly. People listened to experts and cut back on fat and calories. You'll never guess what it did to their health and their waistlines. 

Here's my look at the unintended consequences of a focus on and demonization of micronutrients -- specifically fat -- over real, whole foods.
